Chicken Sausages



Sausages have been created across the globe and in many different cultures for many hundreds of years.  Today they remain a favorite in domestic and professional kitchens alike.  There are no rules when it comes to sausages – traditional ingredients include pork but any meat can be used.  Game, beef and chicken sausages can be found in many stores and the latter, made with high protein, low fat chicken breast, can offer a great alternative for those looking for a healthy option.


Spicy Chicken Sandwiches;  grill (for healthiest results) the chicken sausages, turn during cooking to ensure browned and cooked through, which should take around 20-25 minutes under a moderate grill.  Fry onions to soften and when the sausages are cooked slice them, adding to the sandwich with the onions; add sliced red and green peppers and a hot pepper sauce to create a filling, healthy lunch with some bite to it!


Warm Potato Salad;  dice and boil potatoes, and grill the campisi chicken sausages, when these are both ready, blanch the spinach.  Chop the sausages, and add these with the other ingredients to a bowl, toss lightly with olive oil and Dijon mustard.  Season with salt, pepper and enjoy!
