Spatchcock is a poussin (young chicken) which has been specially bred and grown for processing at three weeks of age resulting in a more tender and succulent bird when prepared and cooked. Game Farm Spatchcock are bred and grown in the NSW Southern Highlands and Sydney Basin. Their delicate flavour and texture makes them an ideal choice in a wide selection of cuisines.
Game Farm birds are free to perch and roam around, they are not caged. Our birds have unlimited access to food and water at all times, whilst grown in large protective enclosures to ensure their safety from predators and the harsh elements of the Australian environment. Their ability to move around freely, with unlimited access to water and a well-balanced diet, encourages good muscle and tissue growth, producing quality meat.
