Introduction

Ossu Bucco is made from beef shanks and is made by slowly braising the beef. It’s flavor is found both in the tender portion of the beef, but also in the bones and bone marrow. In order to cook Osso Bucco you need to slow braise the beef in a beef or chicken stock and then serve it with veggies or a sauce. Veal Osso Bucco is another popualr form of this dish.

Use a dutch oven pot or a slow cooker and then begin by browning the beef shank. Brown each side of the beef in hot vegetable oil and then add in chicken stock with onion, carrots and celery. You can aslo add a few chopped tomatoes for taste and then slowly cook the mixture until liquid has reduced and the beef is tender and flavorful.

Lemon Zest Osso Bucco:

Add a little lemon juice to a traditional white wine Osso Bucco recipe to bring out different flavours. The lemon and white wine work well together to bring out the taste of the broth, plus make the meat even more tender. Feel free to also use grated lemon zest in the broth to bring out an even more distinct taste.
